2 tsp plain gelatin
In a medium casserole, mix together the gelatin, half-cup of sugar and pinch of salt. In a large bowl, beat the egg yolks until thick and creamy. Add the lemon juice and water and mix well together. Pour over the gelatin, then place over medium heat, stirring until dissolved. Remove from heat and add the tequila, triple sec, lemon gratings and drops of green food coloring, mixing well. In a large bowl, beat the egg whites until stiff, then add slowly the quarter-cup of sugar. When the tequila mixture begins to set, fold in the egg whites. Serve in a large glass bowl or individual glasses, decorated with orange blossoms and/or blackberries.
