Devil’s Cut is the newest product in a long line of bourbons from Jim Beam. In their own words: “As bourbon ages, a portion of the liquid is lost from the barrel due to evaporation — that's the ‘Angel's Share.’ After aging, when the bourbon is dumped out of the barrel, a certain amount of whiskey is left trapped within the wood of every barrel. We call that the ‘devil's cut.’” The distillers at Jim Beam extract this oak-rich bourbon that is normally trapped within the barrel, blend it with 6 year old bourbon and bottle it at 90 proof. The result is a very bold, oaky bourbon unlike anything else on the market.

The aroma is primarily oak, cherry and caramel. The flavor is very woody; some of our tasters considered it entirely too woody. Huge charred wood dominates the flavor, but hints of cherry, fig and some vanilla and caramel come through also. The spirit is relatively thin on the palate and quite hot. It finishes dry and slightly bitter, but long into the finish some cherry comes through. This was a polarizing spirit with our tasting panel — some loved it, some hated it. Me? I thought it was a great change of pace from typical whiskey profiles and will definitely buy a bottle for my private collection. ~$25.

Old Whiskey River is named after the Willie Nelson song of the same title. While it is unclear whether Willie owns this brand, it is pretty obvious he endorses it. Distilled by Heaven Hill Distilleries in Bardstown, Kentucky in, conveniently, Nelson County, the bottle comes with a Willie Nelson guitar pick on the bottle and the seal is taped over with a sticker that is reminiscent of Willie’s guitar strap.

The nose of this whiskey is subtle with just hints of orange, spice and oak. The flavor is light, too. Hints of oak, cherry and some pepper come through, but nothing is overwhelming or stands out. This bourbon is simple, unoffensive and overall enjoyable. Like Willie’s music, it reaches a wide audience and, like the man himself, is laid back and easy-going. ~$22.
