Shake extra hard without ice. Add ice and shake hard again for 30 seconds. Strain into a chilled cocktail glass.
Tequila can be a difficult spirit to mix with, but this cocktail smoothly blends earthy, tart, herbal and sweet to create a drink that goes down easy. Herbal Aperol lends complexity to this cocktail (as well as its unusual pink color), while the addition of honey helps sweeten things up. The egg white, when shaken hard as directed, creates a foamy meringue that adds a velvety texture with a dry, almost chalky finish. This cocktail is all about balance, bringing virtually every flavor profile to the table and juggling it with perfect dexterity.
