This recipe is Distil's take on the classic Paloma cocktail--Now available on 2014 drink menu


1½ oz Casa Pacific Blanco Tequila

¾ oz Ruby Red grapefruit juice

¼ oz fresh lime juice

1 oz simple syrup

1½ oz seltzer


Combine all ingredients in tin except seltzer. Short shake. Add seltzer to tin. Strain into old fashioned glass and garnish with a quarter grapefruit slice.

  • 2 oz Tequila
  • 1 oz lime
  • ½ oz grenadine
  • 2 dash Angostura bitters
  • crushed orange garnish


Chill the glass, pack with fine cracked ice, turn in the mixture and garnish with a slice of orange.

  • 1.5 oz reposado Tequila
  • .5 oz Aperol
  • .5 oz honey syrup
  • .25 oz fresh lime
  • 1 small egg white

Shake extra hard without ice. Add ice and shake hard again for 30 seconds. Strain into a chilled cocktail glass.

Tequila can be a difficult spirit to mix with, but this cocktail smoothly blends earthy, tart, herbal and sweet to create a drink that goes down easy. Herbal Aperol lends complexity to this cocktail (as well as its unusual pink color), while the addition of honey helps sweeten things up. The egg white, when shaken hard as directed, creates a foamy meringue that adds a velvety texture with a dry, almost chalky finish. This cocktail is all about balance, bringing virtually every flavor profile to the table and juggling it with perfect dexterity.

  • 2 oz añejo Tequila
  • 1 raw sugar cube
  • Dash of Angostura bitters
  • Dash of Bittercube Orange Bitters

Muddle sugar, bitters and a splash of water. Stir in Tequila. Add ice and stir well. Garnish with a wide orange zest.

Añejo Tequila has been aged for at least a year in an oak barrel, lending it rather whiskey characteristics, but the best añejos tend to maintain at least some of the earthy, vegetal character of the agave. This combination of flavors makes it an excellent and unique alternative for whiskey-based cocktails such as the Old Fashioned. The sugar in this cocktail sweetens up the earthiness of the Tequila while augmenting the caramel and oak tones from the aging process. Bitters round out this cocktail, making it complex and enjoyable throughout.
